Yummy Recipes
April was the first full month spent in quarantine. Being "stranded" at home leaves you to re-examine your surrounding and make the most of it since you can't go anywhere. Here is are some fun things I found myself doing.
I made these delicious treats: banana loaf, homemade Alfredo sauce, and pancakes. Last week was the first time I've made a banana loaf and it came out fantastic. I had bought an abundance of bananas because I got on a smoothie kick and quickly fell off. I was left with almost a handful of extremely ripened bananas, so I looked up a recipe for banana loaf and voila! I'll be honest, I didn't add the walnuts that the recipe called for since it was the only ingredient not found in my pantry.
To be honest I'm not a chicken fan. I'm just never in the mood to eat or cook chicken. I prefer beef for protein but recently I became opened to the idea of adding chicken to some meals. Yes, I am a bit peculiar with chicken. I just can't stand the unrealistic chicken cuts found at grocery stores. I'll end it there. I found some chicken breasts, unfortunately skinless but alas, I needed chicken for my chicken salad. I used only half of what I baked and the other half I reserved for a chicken Alfredo pasta. I found this recipe which I've only done once in the past and turned this into a wonderful dinner meal with my boyfriend.
I also found the time to make a nice hearty breakfast by making some pancakes, from a recipe I like to rely on found on allrecipes.com. I rarely have the time to make homemade pancakes and enjoy them with a cup of coffee, however I found so much time this month that I made them on a couple of weekends. The pancakes came out fluffy and were perfectly served with a bit of butter and maple syrup.
And I'll give credit where credit is due, my boyfriend made an attempt towards making Shake Shack's shack sauce, and I got to say that it came out pretty close! We found ourselves craving burgers so we made our own instead of ordering from one of our favorite burger joints.
